How to make vegan sushi at home! Unique veggie roll recipe that's easy to make and healthy for lunch or dinner. I also show you the basics of making sushi rice and how to roll sushi. It's easier than you think and so delicious :) Full recipes and more details below.

Vegan Sushi Rice

1 cup sushi rice
1/4 cup white rice vinegar
1 tbsp vegan sugar
1 tsp salt

Cook rice according to package directions and let cool. Add vinegar mixture and stir until well combines.

All Green Vegan Roll

1 sheet nori
sushi rice
blanched green beans or asparagus
sesame seeds

Spread a thin layer of rice on to nori, then add veggies and roll tightly. Top with thinly sliced avocado and a sprinkle of sesame seeds. So good with wasabi and ginger on the side!

Red Pepper Sweet Potato Sushi

2 cups steamed sweet potatoes (large chunks or strips)
1 tbsp low sodium soy sauce
1 tsp rice vinegar
1 tsp agave
3 drops sesame oil

roasted red peppers

Combine soy sauce, vinegar, agave, and sesame oil and add in cooked sweet potatoes. Stir and set aside to absorb flavors. (Note: This makes quite a bit of potatoes)

Roll sweet potatoes with thick cut pieces of avocado and top with roasted red peppers. Serve with soy sauce and wasabi.

Sushi making tips:

1. Rinse rice before cooking. Makes it stick together better.

2. Use a very sharp knife when cutting sushi into pieces. A dull knife will make everything fall apart.

3. Try rolling mixed greens or crunch romaine lettuce into your rolls. Adds a nice crunch and lots of nutrients, obviously lol

4. Make spicy vegan mayo as a dipping sauce by combining vegan mayo with Sriracha. SO GOOD

5. Make a few extra rolls to keep in the fridge. A few pieces of veggie sushi is great snack for busy days. Filling and energizing :)
